The certification of the "Ōmi cattle"

To the Ōmi cattle which is high in quality to meet the next requirements in particular will issue certificate.


1. Certification requirements

  • 1.The carcass rating is more than it in A4, B4 class in "Ōmi cattle"
  • 2.The member of the conference of configuration group produced it.
  • 3.It must had been slaughtered and carcass grading in Shiga edible meat center or Tokyo Metropolitan Shibaura slaughterhouse.

We assume "certification Ōmi cattle" which is particularly high quality and kept on choosing among Ōmi cattle.

  • 【Yield grade】 high A –B - C low
    Meat obtained by removing skin, bone, and internal organs from the body, is called the (carcass) carcass. In addition, the percentage of carcasses taken from a living body is large, the grade will be higher.

  • 【Fleshy grade】   high 5–4- 3-2-1 low                                           
    In addition to the marbling, "color and shine of meat" "tightness of meat and texture " " color and shine of fat and quality " evaluated by (1, 2, 3, 4) 4 item 5 stage. Fleshy grade will be determined from the overall decision in the four items.


    ※※We may issue a document to prove Omi cattle for "A3" "B3".
      Such as beef cattle expo to be exhibited on behalf of the prefecture, other than designated slaughterhouse also may authenticate it.
